My wife has to stay out of the sun because of medications that she takes and has been warned to not take too much vitamin D-- she has sarcoidosis, an immune problem What about people who have immune issues?

I would closely follow your doctor's advice here and not take "too much" vitamin D. I would actually ask your doctor for a specific recommendation for how much to supplement-- especially considering that any time you drink milk you're already taking supplemental vitamin D.
As for people with other immune diseases, you may not have this specific problem, so vitamin D supplements are not necessarily a problem.
